Barbacoa is a multi-dimensional concept that is more than just a restaurant. Chef Enrique Martinez designed and inspired the flavors and dishes of Barbacoa. Robert Castoro was born in New Jersey and grew up in a harbor town of Maine, farming and trapping lobster.
Barbacoa beef and sweet potato stuffed poblano chile with cilantro cream and feta cheese. A native to Lithuania, arrived to the United States at the age of 16 and began to paint in his spare time as a clerk at a general store in West Virginia.
